The process of storing roasted coffee for a period of time before brewing it. The length of time depends on the roast level and intended brewing method, but generally, coffee is recommended to be rested between 5 and 14 days. Coffee intended for espresso should be rested longer than coffee intended for filter or cold brew. Some roasting companies will even put the recommended rest time on their bags!
