Extraction is the process of dissolving soluble compounds from ground coffee into water by physical and chemical process. Only about 30% of coffee is extractable, and the ideal range is 18-22%. How much is extracted from coffee determines how the coffee tastes; whether bitter, sour, or perfectly balanced. The main variables that affect extraction are time, temperature, turbulence, and grind size.
